I wanted all the flavors of shepherd’s pie without the extra work, so I turned it into a simple, cozy soup. It turned out even better than I expected! It’s warm, creamy, comforting, and it was a major hit with my kids. The perfect bowl to cozy up with on a cold night!Cook Beef: To a large heavy-bottomed pot over medium heat, add ground beef. Cook and crumble the beef until no longer pink. Then, add butter, diced sweet onion, and minced garlic to the same pot. Cook for 2-3 minutes, until the onions soften and begin to turn translucent.Add Flavorings: Sprinkle in the all-purpose flour and stir continuously for 1 minute to cook out the raw flour taste. Add tomato paste, Italian seasoning, and Worcestershire sauce. Stir until everything is combined.Simmer: Slowly whisk in beef broth, then add diced potatoes. Bring to a simmer and cook for 10-15 minutes, until the potatoes are tender.Add Veggies, Simmer and Serve: Once the potatoes are tender, stir in half and half, frozen veggies, and shredded cheddar cheese; simmer for 5 minutes until the vegetables are cooked and the cheese is melted.
