Cream of coconut: Cream of coconut is often found near the cocktail drinks or sometimes in the baking aisle or international foods aisle. It is not the same as coconut milk or coconut cream. Looks for packaging that specifically states “cream of coconut” – Coco Lopez and Goya are common brands. The ingredients will include sugar and coconut.Crushed pineapple: One 8-ounce can of crushed pineapple is used in the recipe. Don’t drain before using.Pineapple juice: One 6-ounce can of pineapple juice is used. You can also measure out 3/4 cup juice from a larger container. Heavy Cream or Half-and-Half: Either of these ingredients lends the creaminess that is so delicious in this frozen drink.
