The new concept offers freshly baked Japanese breads, citrus-inspired creations and seasonal specialties influenced by Ehime, Japan
Los Angeles, CA (RestaurantNews.com) JINYA Holdings is expanding its portfolio with the opening of Mikan bakery & more, a Japanese-style bakery debuting in early summer at 17237 Ventura Blvd. in Encino. Named after the Japanese word for mandarin orange – a tribute to Founder and CEO Tomo Takahashi’s upbringing in Ehime, Japan, known as the country’s “Citrus Kingdom” – Mikan bakery & more brings authentic Japanese flavors and artisan baking traditions to Los Angeles through freshly baked breads, specialty beverages and citrus-inspired menu items.
Building on JINYA Holdings’ established ramen and robata concepts, Mikan bakery & more introduces a bakery rooted in authentic Japanese culinary traditions. Through his travels, Takahashi hand-selected two pastry chefs from Japan to prepare fresh breads daily, featuring traditional favorites alongside rotating selections. The baked goods are inspired by Tokyo bakery culture in collaboration with Boulangerie MAISON NOBU, a respected Tokyo bakery known for its artisan breads and dedication to traditional Japanese baking techniques.
The bakery’s program is spearheaded by Aya Asaumi, a baker recruited directly from Japan to bring authentic Japanese baking traditions and craftsmanship to Los Angeles.

To celebrate its grand opening, Mikan bakery & more will host a limited-time collaboration with Tokyo-based bakery Boulangerie MAISON NOBU from July 3-5. During the three-day pop-up, Chef-Owner Nobu Hoyo will travel to Los Angeles to personally oversee the collaboration and introduce four exclusive items, including:
- Raisin Walnut Bread
- Mentaiko Baguette
- Matcha Croissant
- Blueberry Cream Cheese Bread
The special menu will be available only during grand opening weekend.
“There are still very few places in the U.S. where guests can experience authentic Japanese bakery bread,” said Takahashi. “Mikan bakery & more allows me to share the experience of visiting neighborhood bakeries during my childhood, places people visit regularly, where the bread is fresh, comforting and rooted in simple traditions. By partnering with renowned bakers from Japan, we’re bringing that authentic experience and level of craftsmanship directly to Los Angeles.”

The name Mikan, meaning mandarin orange in Japanese, reflects the brand’s connection to Ehime Prefecture, Japan’s largest producer of the fruit, and its use of citrus flavors throughout the menu. Inspired by Takahashi’s childhood memories of warming mikan – a common winter tradition in Japan believed to enhance the fruit’s natural sweetness – the bakery incorporates mikan fruit and zest into select breads and beverages.
The menu will feature artisan pastries, Japanese curry bread, classic egg and fruit sandos, shio pan (salt bread) and cube-shaped shokupan, alongside European-style breads including baguettes and focaccia, all made from scratch daily without additives or preservatives. Beverage offerings include premium matcha and hojicha sourced from Uji, Kyoto, specialty coffee, freshly pressed mikan juice and citrus-infused beverages, including the signature Mikan Matcha Latte made with house-made mikan purée. All beverages are crafted in-house using all-natural ingredients and without artificial flavors or colors.
Mikan bakery & more will offer dine-in and takeout service and will operate daily from 7 a.m. to 6 p.m. The bakery will also feature branded merchandise, including apparel, mugs, tote bags and plush Mikan Friends.
